Black Sesame Latte

New York City is being hit by a blizzard today!!  Most people are staying in, working from home, enjoying Netflix, or binge eating!! 

I LOVE drinking hot comforting drinks on a cold day like this.  Sometimes I make a big pot of latte and enjoy it throughout the day. My go-to drinks are usually chai or ginger lattes.  Lately, I've been so addicted to black sesame lattes.  The deep uniquely smoky flavor is simply addicting.  Some people say it's pleasantly "bitter".   Black sesame latte is rich and and more filling than a typical latte, since you leave the sesame paste in the latte.  You can strain the sesame paste from the smooth latte.  But I like leaving the paste in the pot so I can enjoy chewing it for a little at the end of each sip.  How many times would you ever enjoy "chewing" your latte?  So this is kind of a one of a kind experience.

Making black sesame lattes takes some labor and love, but I promise you the outcome is worth your effort.  Since you are going to toast the seeds and grind them, throw a whole cup of the seeds in a pan to toast.  Then grind them in a coffee grinder all at once.  After that, store them in an airtight container and keep in the refrigerator.

Recipe:

1 1/2 C nut milk (cashew milk doesn't work well here)

1/4 C water

3-4 tbsp of black sesame paste

1 tbsp liquid sweetener to taste (optional)

Instruction:

1. Toast the black sesame seeds in a pan at low heat for 3-5 mins, make sure you constantly stir the seeds (they get burnt easily). When they are perfectly toasted, you will hear the popping sound - very lightly.  I usually toast more than I actually use so I won't have to do it again when I want to make a latte again next time.  Remove the freshly toasted seeds from the pan, and grind them in a coffee grinder.

2. Add the first 3 ingredients in the pot, boil at medium heat for a few minute, stirring occasionally until it comes to a slight boil.  You can skip the 1/4 cup of water if you prefer your latte thinker and super creamy.  I usually simmer it a little longer at a lower heat to intensify the flavor.  This way the latte won't end up too thick when adding 1/4 of water at the beginning. 

Note: You can add less or more sesame paste to meet your preference of how intense you want the flavor.  If you want to strain the latte, you may want to add 4 tbsp of the sesame paste.

3. Add sweetener when ready to serve.

Banana Nice Cream Fresh Fruit Topping

Heat wave is hitting us!! Not to worry!! We can stay cool and keep enjoying this delicious and healthy banana nice cream. It's even better when you top it with your favorite fresh fruits. I use cherries and mangoes here since they are ones of my favorite Summer fruits. It's perfectly sweet and creamy and goes so well with big chunks of fruits. The tartness from cherries pairs well with the sweetness from the banana nice cream. The big chunk of mangos tho...hmm..heavenly.

Recipe:

4-6 frozen bananas (make sure you use over ripe bananas)

1/2 c nut milk (more or less, depends on your desired consistency)

1 tbsp coconut oil, optional (love adding coconut oil in my smoothie for health benefits - weight loss and energy boost!! Yes!!)

1 tbsp of maca powder, optional (for health benefits of building stamina, lean muscles and regulate hormones)

1 tsp vanilla extract, optional (just to fancy it up)

Your favorite fresh fruits, as much as you wish.

Blend all ingredients in a high speed blender (except fruits) until smooth.

Layer the nice cream with fruits and top it with MORE fruits!! Enjoy!!

Acai Bowl

I used to be "little" obsessed with acai bowl back in around 2006. My record was 3 bowls in one day. Nope, I didn't get 3 bowls every single day, just at least a bowl a day would hit the spot - like how most people get their coffee. It was easily served as my meal replacement or snack. I would make it my own, purposely went around to get it or just randomly got it in my convenience. 

Now back at it again, not as obsessed as before, and I totally forgot how ridiculously delicious it was. 
The best part of acai bowl is the topping which can be your favorite fresh or frozen fruits, crunchy granola, coconut flakes, nuts, seeds or anything. You can make acai bowl connoisseur by adding all of the above topping and dive in!!! It's so delicious, healthy and refreshing. So perfect for a summer day!! 

Recipe:
2 c frozen berries
1 pack frozen acai or 3-4 tbsp acai powder
1-2 frozen banana
1 c nut milk

Blend all ingredients in a high speed blender until smooth. 

Adding your favorite topping on. And enjoy!!!

Note: you can drizzle a table spoon of liquid sweetener like honey or coconut nectar in a blender or on top of the topping if you prefer it sweeter.

Protein Packed Anti-inflamatory Smoothie

Spring is finally here. This beautiful weather makes everything so pleasant. Even something you don't expect it would be fun to do but this weather can make it more enjoyable. 

I'm not a fan of running,  although it is part of my Muay Thai training,  but somehow I really enjoy running in this weather. Surprisingly I can run a little longer than I normally do. Adding long running to my regular workout regimen can cause inflammation to muscles and joints. Oh!! Oh not to worry if you know how to take care of yourself properly. 

I like adding pineapple and/or turmeric to my meals as often as can, especially when these two ingredients can play well with others for my tastebuds. And it's even better when I can add some protein in there...good source of plant based protein!! 

This combo is really easy and delicious. Pine!!apple Turmeric Hemp Smoothie.

Recipe:

1/4 pineapple or 2 C diced pineapple. Fresh or frozen is fine

1 knob fresh turmeric 

2 tbsp hemp seeds

1 C coconut water, water or nut milk

Blend all ingredients in a bender and until well blend. 

Enjoy.

Note: if you use unfrozen fresh pineapple, you can toss a few ice cubes in a blender to make it more refreshing. It will be so rewarding after coming back from a  long run. 

Anti-inflamatory Juice

Started my Saturday morning with this 32oz of this juicy goodness. It's so delicious, refreshing and packed with plenty of health benefits especially anti-inflamation.

Recipe:

2-3 grapfruits

Half pineapple

1 big knob ginger

1-2 knobs tumeric

Juice them up and enjoy.

Persimmon Smoothie

Persimmons are in season. They are one of my favorite fruits for the Fall and Winter. I simply can't get enough of them and usually have them as my mono meal or snack during the day. Just peel and slice bite size and keep munching. Some people don't even bother to peel or slice. They enjoy persimmons like how they do with apples. Persimmon skin is totally edible. 

Today, I get a little more fun with these crispy persimmons by making delicious smoothie. The little touch of cinnamon is totally perfect for the Fall.

Persimmon Smoothie recipe:

2 frozen bananas

2-3 persimmon (3 if they are small)

1 C homemade nut milk (I use cashew milk)

1/4 tsp cinnamon

2 tsp maca powder (optional)

 

Blend all ingredients in a high speed blender until smooth.

Tips: use overripe bananas, peel and freeze them ahead of time.

Did I say PEEL your bananas before freezing? (don't be surprised, a lot of people don't peel their bananas. My buddy Dave, is one of them)


Banana Fig Nice Cream

Figs are in season. I've been enjoying so much of fresh figs as snack and mono meal.

Today I'm having fun with them by adding in my smoothie. 

Getting a quick meal in before going out and about on Saturday with this healthy and delicious fig banana nice cream. Sooo good!!

Recipe;
Ingredients:
2-3 frozen bananas
3-5 fresh figs, more for topping
1/2 C homemade nutmilk

Instruction:
Blend all ingedients in a high speed blender until smooth.
Top of sliced fresh figs before serving.

Have a wonderful weekend everybody.

Blackberry Ginger Fruit Leather

More recipe of fruit leather, just because it is addictive and everybody LOVES it, who doesn't?!

This time you guys are going to have fun and be more creative with fresh herb like ginger.. Oh yeh..ginger is good for any season and any reason. Trust me, this combo of blackberry and ginger is so to die for, not to mention a ton of health benefits from ginger.

Recipe:

Ingredients;

2 C blackberries

1 knob of ginger (about thumb size), peeled

2-3 tbsp agave (more or less adjust to your own liking)

2-3 tsp lemon juice (depends on how tangy you like)

Instruction;

1. Blend all ingredients in a blender or food processor until smooth.

2. Strain. You can skip this part. I prefer to strain the puree, for the final smooth texture, because blackberries contain a lot of seeds and sometime ginger gets a little fibrous.

3. Line a sheet of parchment paper or silicone mat on a dehydrator tray (or baking sheet for the oven) and use an offset spatula to spread out the puree to about 1/8"-1/4" thick. (I'm not much serious about the thickness)

4. Dehydrate in a dehydrator at 125F for the first a few hours and reduce the temperature to 115F for another 6-8 hours (over night) Time varies, depends on how thick you spread the puree.

Roll up or cut into any shape you wish. Store them in a ziplock bag.

Fruit Leather.. Fruit Raw Ups

I can't express enough how much I love fresh juicy berries in the Summer. I can simply have fresh berries by themselves as a snack or mono meal,  making smoothies or creating delicious healthy snacks out of them.

I just got a big box of organic strawberries (they are ones of dirty dozen list. It's best to get the organic ones) for such a deal from Trader Joe's and am going to have some fun making some delicious tangy fruit leather, add some spiciness in there if you are like me.          

Speaking of the word "leather", someone points it out to me that it doesn't sounds so appetizing as food and suggests me to call "Fruit Roll-Ups"!!    Hmmm.. Honestly I don't see any good health benefits why I would tie this healthy delicious snack with sugary unhealthy snack brand - no offend if you love that brand!! But let me call this healthy delicious strawberry snack FRUIT RAW UPs!!

Recipe:

Ingredients

1 lbs of fresh organic strawberries, rinsed and stemed

2-4 tbsp liquid sweetener, (agave, maple syrup, honey, coconut nectar). Sometime, when you are lucky, the fresh berries are already sweet to begin with so you don't have to add much sweetener

2 tsp - 1 tbsp lemon juice. Start from little amount first. Sometime strawberries can get really tangy. 

If you like to make it spicy like I do, add 1/8 tsp of cayenne pepper, 1/4 tsp paprika and a pinch of salt.

Instruction

1. Blend all ingredients in a high speed blender or a food processor until smooth. Taste it, you may want to add more sweetener or lemon juice, adjust it to your own liking.

2. Strain the puree. You can skip this part. I like to strain it for super smooth texture.

3. Line a sheet of parchment paper or silicone mat on a dehydrator tray (or baking sheet for the oven) and use an offset spatula to spread out the puree to about 1/8"-1/4" thick. (I'm not much serious about the thickness)

Alternative way, if you don't have a dehydrator you can put the sheet in the oven at the lowest temperature for at least an hour on the upper rack.. Some ovens offer the  lowest temperature as 170F but some can go down to only 225F so please adjust the time accordingly. It might take up to 2-3 hours depends on the thickness of the the spread puree and the temperature.

Matcha Green Tea Ice Latte

I'm a huge fan of Matcha green tea powder for its earthy flavor, health benefits and vibrant green color.  I quit coffee years ago and have been enjoying Matcha green tea more and more.  The caffeine in Matcha slowly and steadily releases energy to your body so you don't deal with jittering effect like you get from coffee.  It increases energy levels and endurance (try adding it to your pre-workout boost).  It also helps  promoting concentration, enhancing mood and improving memories (perfect as an afternoon drink when you get drowsy) The tea leaves are ground into very fine powder so it is high in antioxidants and provides more nutrients than steeped green tea. Instead of throwing the tea leaves away, why not ingest all of their antioxidant benefits (to keep you look younger, yess!)  And because of high level of chlorophyll in Matcha green tea, it 's a powerful detoxifier to remove chemical toxins from your body.

 Matcha green tea ice latte is another addiction for me in the summer. It's so refreshing and really easy to make with just a few ingredients:

Recipe:

1 1/2 C nut milk

1 tsp Matcha green tea powder

1 tbsp liquid sweetener (honey, agave, maple syrup, coconut nectar)

1/2 C ice

Instruction:

Put all ingredients in a shaker. Vigorously shake it for at least 15 seconds or until the Matcha powder completely breaks down.

Enjoy!!

Note: If you don't have a shaker, simply use a mason jar or any jar with a  lid and shake it until the matcha powder breaks down. You will see a lot of green speckles all over the jar at the beginning, don't stop, just keep shaking, vigorously!!


 

Banana Ice Cream & Chewy "Candy"

It's a toasty day. All I want is ice cream!!

What's better than healthy Banana Ice Cream with guilt free chewy "candy"???  It's so delicious, rich and creamy and a little twist of tanginess from freeze dried raspberry. Oh yumh!!

Recipe:

2-3 frozen bananas

1/2-3/4 c nut milk (more or less, depends on your desired consistency)

2 pitted dates

a handful of freeze dried raspberries

1/2 tsp vanilla extract (optional)

1 tbsp coconut oil (optional)

Blend all ingredients, except dates and freeze dried raspberries, in a high speed blender until smooth. Then add dates and blend for another 10 seconds. Crumble freeze dried raspberries on the ice cream and stir with a spoon a few times before serving.

Enjoy!!

Note: Make sure you use overripe bananas and don't forget to peel bananas before freezing (believe me there are a bunch of folk out there don't peel bananas before freezing). I prefer to add dates at the end and blend for another 10 seconds to get chunky chewy texture just like chewy candy, instead of adding at the beginning. Same thing for freeze dried raspberries, I crumble them on ice cream right before serving to get good kick of tanginess bite of bite. If you add it in the beginning, you will lose the good kick of tanginess and that little puffy texture. Also I LOVE adding coconut oil to some of smoothies for health benefits. Do you know coconut oil helps you lose weight, burn fat and boost your energy?

Let’s get a new combo of smoothie into our life. This combo of watermelon and frozen cherries is so refreshing and perfect for a hot summer day!!

 

Recipes:

2 C frozen cherries

2-3 chucks of watermelon (as much as you desire)

1 small piece of fresh ginger, about thumb size (optional)

 

Blend all ingredients in a blender until nice and slushy!!

Basil Melon Mixed Berries Smoothie

Hello Tuesday!! It's less than a week to roll into the summer.  June 21st is officially the first day of summer, so it's basically already here.  Aside from the increasing sunshine, I love the abundance of fresh fruits and herbs as I can mix them together on salad or smoothies for a savory kick.  Thai basil is one of my favorites, simply because I love its strong aromatic flavor (also maybe because I share the same origin with the herb)


The smoothie combo today is so delicious and refreshing with a lovely kick of Thai basil.
1-2 big chunks of watermelon
2 c frozen mixed berries
1 handful of Thai basil leaves

Blend all ingredients in a blender until smoothie.
Enjoy!!

Note: I add 2 tbsp of hemp seeds as a good source of plant based protein. The nutty flavor of hemp seeds won't interfere with the refreshing flavor of this combo at all, in case you are not a fan of hemp seeds.

Grapefruit Pineapple Slush

Hello Monday, may I start kicking your butt with something healthy and refreshing so I will have plenty energy and mental clarity to focus on you throughout the day??

My first meal of the week is so delicious, light and refreshing which is so perfect for this gorgeous weather. I didn't expect this simple combo of grapefruit and pineapple would come out so amazing. It's slushy, tangy with perfect amount of sweetness.

Recipe:                                                                                                                                              

2 grapefruits, peel & seeded                                                                                                              

2 C frozen pineapple                                                                                                                    

1tbsp of maca powder (optional)                                                                                                 

Blend everything in a blender until smoothie and enjoy!!                                                            

Note: this yields around 32 oz, perfect amount as a meal replacement. I top it with sliced fresh mango. Soooo good!!

When you start your day with a healthy meal, you tend to eat healthy throughout the day. Even better, when you keep the first day of the week healthy, you are motivated to keep it that way for the rest of the week (especially after you hit it hard on the weekend)

Banana Ice Cream with Dark Chocolate Coated Cherries

I've been craving my favorite banana ice cream since the weather got warmer. Today is the day so I'm making myself a big serving of this little treat for breakfast!! It's super easy, deelish and healthy for ya. I also have some fun by topping it with dark chocolate coated cherries and fresh raspberries. LOVE the tartness of cherries with a good twist from dark chocolate. It is the bomb. Not to mention the lovely texture when you bite on the thin brittley chocolate coating and follow by icy chewy cherries. Oh my, it's so divine!!

I made a lot of dark chocolate sauce for Easter eggs and have good a amount of leftover. So I use that with frozen cherries.

Recipe:

Dark Chocolate Coated Cherries

Dark Chocolate sauce (check the recipe from Eater Eggs)

Frozen cherries, as much as you desire

dip cherries in chocolate sauce and put them aside

 

Banana Ice Cream

3-4 frozen banana

1 c homemade nut milk (I use cashew milk)

1 tsp vanilla extract

 

Blend all ingredients in a high speed blender until smoooooth. And top with chocolate coated cherries and your favorite berries. Yummmh

Note: you can use any of your favorite frozen fruit and berries. If you don't have time to make to dark chocoalte coatig, just only the the banana ice cream with fresh berries will hit the spot, I promise.

Chocolate Easter Eggs

Easter..Easter..What kind of delicious treats you can enjoy without having a food coma after lunch or dinner this Sunday?? How about these delicious and guilt free Chocolate Easter eggs!!??
They are very chocolatey, chewy and perfectly sweet with a good balance of nutty flavor. So yummy and super easy to make, even your kids can have fun making them with you. And you can be even more creative playing around with different coatings. These treats are packed with antioxidants from raw cacao powder, also coconut oil will help you use weight and burn fat. Delicious and healthy…you can beat that!! Oh they look pretty too.

Chocolate Easter egg recipe:

Eggs:
10 Medjool dates, pitted (as many as you desire)
1/4 C of your favorite nut butter. I use coconut butter and almond butter (highly recommend)

Chocolate:
1/4 C raw cacao powder
1/4 C agave or maple syrup
1/4 C coconut oil

Coating:
1/2 C coconut flakes, or
1/2 C freeze dried raspberry, or
1/2 C buckwheat groats or
1/2 C chopped nuts, 
1/2 C of cacao nibs (for bitter chocolate lovers)

Waxed paper

Instruction:
Set wax paper on a plate or tray that's big enough to hold all dates.
Stuff your favorite nut butter in the dates. You can use different nut butters for more variety. Place them on wax paper and freeze for at least 15 mins.

Whisk chocolate ingredients in a bowl until the mixture gets completely smooth.

Take the stuffed dates out of the freezer and dip each date in chocolate sauce then coat it with you favorite coating. Place the chocolate coated dates on waxed paper and freeze them for at least 15 mins.

Now you have super yummy chocolate Easter eggs to enjoy without any guilt.
I personally like pairing coconut butter with dried coconut coating, almond butter with buckwheat groat coatings. Freeze dried raspberry coatings goes really well with almond butter as well.

Note: the amount of nut butter and chocolate sauce can be varied. It depends on how big your dates are and how much nut butter you like to stuff in.

Dandelion Coconut Smoothie

"Dandelion tastes like butt" one of my friends says after her experience of juicing it. I can't agree with her as I really don't know what butt tastes like and I never juice dandelion. To me, dandilion is not my most favorite green vegetable because of its strong flavor but I put it smoothies the most frequent after spinach and kale. Although I don't enjoy its flavor but love the health benefits, so combining it with other strong flavor fruits like berries or pineapple helps toning down its flavor.

Dandilion detoxify your liver (listen up boozers), and blood, and alkalize your body.

Here is one of my most favorite combos:
1 fresh young coconut, meat and juice
1-2 C of frozen berries (depends on how hungry you are and how much you want to hide the flavor of dandelion)
1 small bunch of dandelion

Blend all ingredients in a blender and enjoy!!

Coconut Chia Smoothie

"Let it snow, let it snow, let it snow"
And let's hope this is the last snow of this winter!! Looking at the forecast ahead and now I'm already saying goodbye the snow with this Coconut Chia smoothie.

Recipe:
1 fresh young coconut, meat and juice
2 frozen bananas (room temperature OVERRRIPE bananas are fine too)
Chia Pudding (see note)
1 tbsp maca powder (optional)
1-2 tbsp coconut oil (optional)
1 tsp vanilla extract (optional)

Blend all ingredients in a high speed blender, except chia pudding, until smooth. Then add chia pudding and blend at slow speed for 5 second.

Note: for chia pudding: mix 2 tbsp of chia seeds with 3/4 c of water or nut milk and let soak over night or at least 20 mins. If you don't want to soak chia seeds at all, you can blend the seeds with other ingredients all at once in the blender. But I LOVE having some texture in my smoothie so adding the pudding at the very end and blend it at a low speed does a perfect job.
