Blackberry Ginger Fruit Leather

More recipe of fruit leather, just because it is addictive and everybody LOVES it, who doesn't?!

This time you guys are going to have fun and be more creative with fresh herb like ginger.. Oh yeh..ginger is good for any season and any reason. Trust me, this combo of blackberry and ginger is so to die for, not to mention a ton of health benefits from ginger.

Recipe:

Ingredients;

2 C blackberries

1 knob of ginger (about thumb size), peeled

2-3 tbsp agave (more or less adjust to your own liking)

2-3 tsp lemon juice (depends on how tangy you like)

Instruction;

1. Blend all ingredients in a blender or food processor until smooth.

2. Strain. You can skip this part. I prefer to strain the puree, for the final smooth texture, because blackberries contain a lot of seeds and sometime ginger gets a little fibrous.

3. Line a sheet of parchment paper or silicone mat on a dehydrator tray (or baking sheet for the oven) and use an offset spatula to spread out the puree to about 1/8"-1/4" thick. (I'm not much serious about the thickness)

4. Dehydrate in a dehydrator at 125F for the first a few hours and reduce the temperature to 115F for another 6-8 hours (over night) Time varies, depends on how thick you spread the puree.

Roll up or cut into any shape you wish. Store them in a ziplock bag.
